Perfect Autumn Night Butternut Squash Soup
Hello everyone!
It is no surprise that I love Autumn and all the amazing ingredients that come with it. Butternut Squash is one of my favorites. I really think it is one of the most comforting foods ever! So I decided to make this delicious & healthy butternut squash soup to warm our hearts on these cold nights that we’ve been having. I am 100% serious when I say this soup is like the universe giving a HUGE HUG! YOU WILL LOVE IT! here goes:
Recipe
Ingredients:
1/4 cup celery, small diced
1/4 carrot, small diced
1/2 cup white onion, chopped
3 cups butternut squash, medium diced
5 cups chicken stock (sub for veggies stock to make it vegan)
3 - 5 fresh thyme stems
1/4 tsp salt
1/8 tsp black pepper
extra salt & pepper
pinch of nutmeg
Olive oil
Directions
Set butternut squash in an oven tray, drizzle olive oil, salt & pepper, and roast for about 20 min @ 400 F
Once the butternut squash is done, In a soup pot/ stock pot add olive oil and sautee celery, carrots, and onions for about 5 min or until golden brown. Add roasted butternut squash and cook for 1 min
Add stock and thyme stems
Season with salt, pepper and simmer for at least 30 min.
After that your soup is ready to blend, you can transfer to a blender in small batches or use an emulsion blender inside the stock pot, whichever is of your convenience.
FInish with a pinch of nutmeg to taste and your healthy, comforting soup is ready!
