Almond + Dark Chocolate Toffee

For the next few weeks we will have a ton of sweet recipes for your parties, gifts and to share with your loved ones. TOFFEE! everyone’s favorite right? personally, it is one of my favorite holiday treats, it reminds me of this lovely season, of my family and of a good time! this recipe is way easier than it looks, just follow these easy steps and you’ll be sharing a bite of goodness with your family in no time!
I added some easy DIY Christmas inspo that is super budget-friendly, delicious and proven to impress!
Recipe
Ingredients
2 cups sugar
2 cups butter
1/2 tsp salt
1 tsp vanilla
1 1/2 cup toasted almonds
1 cup dark chocolate chips
1/4 cup warm water (for emergencies, see notes!)

Directions
In a pot, add butter (cut in small pieces) and sugar. Turn on low-medium heat and let it melt together, don’t try to rush it as it is very important that they melt simultaneously. Stir with a wooden spoon until fully melted.
Make sure as they melt your mixture looks homogeneous, if it doesn’t you will have a layer of fat on top. in this case, reduce heat and stir with your wooden spoon until it is incorporated.
Cook your toffee until it is a medium amber color and your thermometer shows 137 C stirring constantly.,
While your toffee is cooking, prepare a sheet pan with parchment paper or a silicone mat. You can add half of the almonds to the sheet pan so your toffee has different layers of crunch.
When your toffee is done, take off the heat and add vanilla. Then, pour over a previously prepared sheet pan and spread if needed.
Sprinkle your chocolate chips on top of the toffee, since it is very hot they will melt. let them melt for about 5 min and using a spatula spread chocolate all over the toffee.
Finish with more toasted almonds on top.
Let it cool and then cut into pieces. Store in an airtight container.
IMPORTANT NOTE:
A lot of factors like change in temperature, quality of the pan, or distribution of heat can cause your toffee to separate. If this happens, and you respond quickly it is an easy fix.
Lower the heat and add 1/4 cup of warm water, add it slowly as you might not need it all. Stir until your toffee comes back together. (You can only use this once, so use it wisely and just in case of emergency)!
