Salmon Patties
This time of the year always calls for some barbecue, burgers and hot dogs. Specially around the 4th of July festivities. This Salmon Patty Burger is so far my top choice to stay healthy while having all these outdoor gatherings. Plus, it’s so easy to make and so delicious!
The best part? you can make a big batch, enjoy it that day and freeze the rest for later.
Recipe
Ingredients
1 lb center cut salmon
1/2 yellow onion
1 red bell pepper
1 green bell pepper
2 eggs
Olive oil
Fresh dill
Garlic powder
Salt & pepper
Directions
Season salmon with garlic powder, salt and pepper, Drizzle with olive oil and bake @350 F for 10 - 15 min.
Small dice onion and pepper and add to a bowl.
When the salmon is ready, let cool at room temperature for 10 min. The use 2 forks to “flake” it and add it the bowl with onions and peppers.
Mix everything together and add 2 eggs, mix again until well incorporated.
Adjust flavor adding more garlic powder, salt and pepper.
Add chopped fresh dill and mix well.
This recipe makes 6 patties, make patties and grill for around 3-4 min each side.
Another thing that I really love about this recipe is that it is so versatile. You can eat it with a whole wheat burger bun and make yourself an amazing healthy burger, or use it as a the protein to your everyday salad.
