Honeycrisp Apple + Almond Butter Muffins
Hellooo everyone!
It’s November and the cold weather is starting to build up! Here’s a recipe for all of you who need a little guilt-free comfort companion to your cup of coffee. These muffins are a great breakfast or snack, full of goods to boost your energy and most importantly, so yummy!
Recipe (yields 18 cupcakes)
Ingredients
Liquid ingredients:
3 eggs
2/3 cup sugar-free monk fruit syrup (or maple syrup)
1/4 cup coconut oil (or canola oil)
1/2 cup unsweetened applesauce
3 tbsp crunchy almond butter
1 tsp vanilla
Dry Ingredients:
2 cups almond flour
1 tsp baking soda
1 tsp baking powder
pinch of salt
2 tsp cinnamon
2 - 2 1/2 cups Honeycrisp apple, skinless and small diced
Toppings:
Smooth almond butter
Directions:
Preheat the oven @350 F and have your cupcake or muffin mold ready with the paper liners.
In a bowl mix all dry ingredients except for Honeycrisp apple
In another bowl, mix all liquid ingredients and whisk until incorporated.
Slowly, add dry ingredients to liquid ingredients mix ( add in 2 or 3 times)
Add apple and mix.
Pour mixture into each cupcake/muffin mold.
Bake @ 350 F for 20-25 min. When you think they are ready, do the toothpick test and if it comes out clean they are ready!
Cool down and top with granola and almond butter.
