Almond Butter Pistachio (No Bake) Cookies

It is now Cookie Week day #2 and I couldn’t be more excited! Personally, I loved this recipe and I think you will too. This recipe fits almost all the diets out there! it is vegan, gluten-free, low sugar (can be made sugar free) and it so easy to make! Let’s get down to business…
Recipe
Ingredients
1 cup Almond Butter
1 cup Oats (I used quick oats)
1/2 cup raw pistachios (without shell)
1/2 cup shredded coconut
1/2 cup maple syrup (to make sugar free use maple-flavored monk fruit syrup)
1/4 cup hemp seeds
1/2 cup dark chocolate chips
generous pinch of salt
Directions
Start by checking the consistency of your almond butter. if it’s too thick and dry you can melt it over a double boiler or in the microwave until you get a very smooth texture. If it’s soft enough you can disregard this step.
Chop your pistachios until you have very small pieces. (optional to slightly toast pistachios for more flavor)
In a bowl, add your almond butter, oats, pistachios, coconut, salt, and hemp seeds and mix very well.
Then. add maple syrup and chocolate chips, mix again until everything is well combined.
Prepare a sheet pan with parchment paper or a silicone mat.
Roll a small ball with your dough and flatten it out with your finger, pressing on the parchment paper or mat until you have the desired shape.
Decorate with more chocolate chips and refrigerate until they set, around 10 min.
