Superfood Pancakes

So, it’s January and we are all about improving health habits. This recipe is an easy way to have a delicious, nutrient dense, healthy breakfast! Who doesn’t love pancakes anyway?
Here goes!
Recipe
Yields about 10 pancakes
Ingredients
1 cup whole wheat flour
2 tsp baking powder
2 pinch of salt
1 egg
1 cup almond milk ( I used unsweetened vanilla flavored)
1 tbsp hemp seeds
1 tbsp chia seeds
1 tbsp ground flax seed
2-3 tbsp maple syrup
1 tsp vanilla
1 1/2 tbsp avocado oil (sub for melted coconut oil if desired)
Toppings:
Fresh sliced banana or any fruit
granola
honey or maple syrup
yogurt
Directions
In a bowl, mix all dry ingredients.
In another bowl whisk the egg and add almond milk, avocado oil, maple syrup and vanilla
Slowly add liquid ingredients to dry ingredients and mix until well incorporated.
In a pan, add about 2 tbsp of mixture for each pancake and cook both sides.
Top with your favorite fruit, granola or yogurt and enjoy!
