Matcha-Banana Breakfast Cookies

We are back to healthy for #cookieweek. I loved this recipe, it is the perfect healthy breakfast or on the go snack. It’s got all the goods to start the day with lots of energy and it’s got only the healthiest ingredients. Plus, it is vegan and gluten free! I hope you enjoy it!

Ingredients

  • 1/2 cup almond flour

  • 1 cup quick oats

  • 2 ripe bananas

  • 3 tbsp almond butter

  • 1/2 tsp baking powder

  • 1/4 cup maple syrup (to make sugar free use maple flavored monk fruit syrup)

  • 1/4 cup dark chocolate chips

  • 1 tbsp culinary grade matcha powder

  • 1 tbsp ground flax seed

  • 1/4 cup shredded coconut

Directions:

Preheat oven 350 F

In a bowl, mash bananas and mix with almond butter, maple syrup, and matcha powder.

In a another bowl mix almond flour, quick oats, baking powder, and flax seed.

Slowly add dry ingredients to banana mixture.

Stir in chocolate chips and shredded coconut

Bake for 12 - 15 min
