Healthy Thai-inspired Shrimp Noodle Bowl

I hope you are doing great. We haven’t really talked about this in here but at this moment in time we are ALL quarantined, it doesn’t matter what part of the world you are in, today we share this. With that being said, I bring to you an amazing healthy recipe to light up your day, we need to learn how to do our best with what we’ve got at home and I hope that this recipe brings you a little bit of joy. it took me less than 20 min to make and the result was just better than what I expected. SOOO GOOOD. I hope you guys enjoy it, and please take care of yourselves and your loved ones.

Recipe
Ingredients
sesame or avocado oil to sautee
1 lb cooked shrimp
1 8oz brown rice noodle pack
1 bell pepper (color of your choice, or use several colors)
3 green onions
2-3 garlic cloves
1 handful spinach
white and black sesame seeds for garnish
Sauce
1/4 cup coconut aminos
1/2 tbsp rice vinegar
1 lime, juiced
1/2 tbsp fish sauce
1 tsp mirin
Directions
Cook brown noodles, drain and add a little bit of oil to avoid them to stick to one another
Mix all sauce ingredients and whisk until incorporated
In a wok or big skillet, heat the sesame or avocado oil and sautee green onions, garlic and bell peppers.
Add cooked shrimp
Add cooked noodles and mix very well
Add sauce and mix very well
Finally, finish by adding fresh spinach.
Garnish with green onions and sesame seeds.
