Healthy Pad See Ew
Hello!
So, I know how much y’all loved the Healthy Pad Thai Recipe I shared with you, and to be honest it is one of my all-time favorites as well. I had never made Pad See Ew before and I was amazed how easy and tasty it is! It’s flavor is super different from Pad Thai, it is more salty and savory and Pad Thai is a bit sweeter. If you are Thai lover like we are, here’s a recipe you’ve got to try!
Recipe
Ingredients
8 oz Brown Rice Thai Noodles
2 chicken breasts (use tofu to make vegetarian)
2-3 garlic cloves
3-5 green onions
8 broccolini
1 egg
2 bok choy
Coconut aminos
Sesame oil
Low sodium soy sauce
Sesame seeds
Sauce
2 tbsp coconut aminos
2 tbsp oyster sauce
2 tbsp low sodium soy sauce
2 tsp rice vinegar
2 -4 tsp coconut sugar
2 tbsp water
Directions
Marinate Chicken with coconut aminos and low sodium soy sauce.
Combine all sauce ingredients and whisk.
Cook Thai noodles in boiling water, when cooked, drain and add sesame oil to avoid them from sticking to each other.
In a skillet cook marinated chicken until done (optional to add bok choy stems for more flavor)
In a wok, sautee minced garlic and chopped green onions
Add bok choy (without stems) and broccolini and cook.
Add 1 egg and cook
Add cooked noodles and toss
Add sauce and cooked chicken and toss.
Serve and garnish with green onions and sesame seeds.
