Banana Nut Muffins

OH MY GOSH, this is my new favorite muffin recipe, I think I’m going to have to make a weekly batch. It’s the perfect on the go breakfast, pre-workout snack or any snack for that matter.

Recipe

Ingredients:

  • 2 bananas

  • 1/3 cup maple flavored monk fruit syrup (sub for honey or agave) 

  • 1/4 cup coconut oil

  • 1/4 cup unsweetened apple sauce

  • 1 cup oat flour

  • 1/2 tsp baking powder

  • 1/2 tsp baking soda

  • 1/2 tbsp cinammon

  • 1/2 cup chopped pecans 

Directions:

Super simple! 

In a bowl mix all dry ingredients.

In another bowl, mix liquid ingredients and whisk.

Slowly add dry ingredients to liquid mix and stir well until everything is completely incorporated.

Bake @350 for 20 min and enjoooy!
