10 Minute Shrimp Stir - Fry

This recipe is one of my favorite week night dinners, it’s so convenient and very easy to make. It is one of those “just throw in whatever you’ve got in your fridge” kind of recipes, so if you don’t have a specific ingredient, feel free to replace it with whatever you’ve got.

Ingredients

  • 10 - 15 large shrimp

  • 2 garlic cloves

  • 1 tbsp chopped onion

  • 1 tbsp minced ginger

  • 1/2 broccoli head

  • 10 asparagus

  • 1 red bell pepper

  • 1 green bell pepper

  • 1/4 cup roasted peanuts

  • 3 tbsp sesame oil

  • 1/4 cup coconut aminos

  • salt & pepper

Directions

Marinate shrimp with coconut aminos, sesame oil, salt and pepper.

Steam broccoli and cut into florets. Chop the rest of the vegetables.

In a large skillet, heat up some sesame oil and sear both sides of the shrimp. Set aside.

Sauté garlic, onion and ginger.

Add asparagus and cook, add bell peppers and cook. Finally add broccoli florets and shrimp.

Season with coconut aminos, salt and pepper.

Garnish with roasted peanuts and sesame seeds.

Serve with whole grain noodles or brown rice.

TIP: add a little bit of salt and pepper every time you add a new vegetable, that way it will be easier to adjust flavors at the end.
